What Is Tara Gum?

Tara gum is a colourless, plant-based galactomannan hydrocolloid with a neutral flavour profile, produced by mechanical separation and gentle milling of the endosperm of the seeds of the Caesalpinia spinosa tree, native to the Andean regions of Peru.

Widely used across the food and beverage industry, tara gum functions as a thickener, gelling agent and water binder, helping to improve viscosity, texture and product stability across a broad range of applications, including freshness enhancement in baked goods. Used alone or in combination with other hydrocolloids, it delivers consistent performance under a wide range of processing conditions.

A Proven Alternative to Locust Bean Gum

With global supply constraints and growing demand for sustainable, ethically sourced alternatives, tara gum has become a reliable, high-performing alternative to locust bean gum (LBG), and to other galactomannans such as guar gum.

  • Equivalent viscosity with up to x3 less tara gum than LBG
  • Swells in cold and hot conditions (compared to LBG which is only hot soluble)
  • Strong heat resistance (up to 145 °C in continuous processing)
  • Stability in acidic environments (down to pH 3.5)
  • Excellent synergy with other hydrocolloids
  • Similar in structure (a 3:1 mannose to galactose ratio, compared to a 4:1 ratio in LBG)

This makes it suitable for applications ranging from ice cream and dairy alternatives to sauces, bakery and fruit preparations.
